Pyramid Day

As we began talking to our children about moving back to Africa, a lot of times we mentioned the pyramids as something so cool they’ll get to do because we will live there. You know… to give them something to look forward to and distract them from the fact that we were taking them away from all their friends and family, ack!!

So we had to deliver!

And we did! We did the tourist thing and had the highly photographed (by us and others) exhausted children and the photos to prove it…

Tried and True Recipe: Morning Glory Muffins

Please note, this is not my recipe. Not sure where it came from (other than through my Mama!) What I do know is that these are wholesome and tasty. 

Who doesn't love muffins? These days, I find myself packing multiple breakfasts (my kids all eat breakfast when they arrive at school), lunches and snacks... muffins sure do come in handy to throw in for one of those meals. These are similar to my apple-carrot muffins, but do pack a bit more fruit and veg punch!

It IS a bit more labor intensive than I usually prefer especially since I even have to make my own applesauce over here. But I always make at least a double batch so it makes it more worth it. Also, they're full of so much fresh fruit and veg goodness that I feel good letting the kids eat lots of them.



Morning Glory Muffins:
2 1/2 cups flour (I use a mixture of white and whole wheat, to make them more wholesome)
1 1/4 cups sugar (I use less sugar and would like to try with honey!)
3 t cinnamon
2 t baking soda
1/2 t salt
3 eggs
3/4 c applesauce
1/2 vegetable oil
1 t vanilla
2 c grated carrot
1 medium apple, peeled and grated
1 8 oz can crushed pineapple
1/2 c flaked coconut
1/2 raisins
1/2 chopped walnuts (I usually skip these) 

Preheat oven to 350. In large bowl, combine the first five ingredients. In another bowl combine eggs, applesauce, oil and vanilla. Stir wet mixture into dry just until moistened (it will be thick). 
Stir in remaining ingredients.
Fill muffins cups (I use a mix of regular and mini muffins) 2/3 full. Bake 20-24 mins (less for minis) until toothpick comes out clean.

Four Babies, One Onesie

Okay so I already lied. I thought I had all four of my babies in this onesie. But maybe I’m wrong because I can’t find a picture of the first baby in the onesie. And I’m pretty organized. So I think if I had a picture… I’d be able to find it.

Rats.

Brave Kiddos (First Day of New School)

Over a month ago, we had a fake first day of school for the big kids. Very soon after our arrival, we took the kids to see the school we had chosen (it was my first time too!). This is a local private school. There are only a very few other foreign families that send their kids to this particular school. We have our reasons for this. Ask me sometime if you'd like to know.

Here is H in his classroom and N outside her building.



After waiting a few weeks they said the children could start. That was this day...

  

They were so eager and ready! My heart about broke as they walked to school with their Daddy. So much is new for them here and they walked off happy to go to school. They've never had a regular 'five long days of school' schedule before. It's bittersweet for this Mama.

  

I told Mike  that I needed him to take them. I didn't think a bawling Mama at dropoff would really help matters.

 

 Such brave babies. I'm so proud of them.

Unfortunately, an hour later they came walking back. :( 


So what happened was Mike dropped the kids off to their classrooms and were welcomed and happy and ready. Then he went to ask a question of the principal and she said "Oh no! They cannot attend today. The paperwork is not finished!" and promptly sent a colleague to go remove them from their classrooms only 15 minutes later. Sweet N walked in the office to see her Daddy and broke down in tears. She was so ready and all geared up and was so brave and then they told her she couldn't' stay. 

So. Devastating. 

I was pretty frustrated a this point. Paperwork can take an unknown amount of time, I understand. But don't tell children that they can start and then promptly pull them back out.  The kids were frustrated too. Such a roller coaster for them.

So this began about another month of waiting. It was not easy waiting. Our family has been in serious transition for at least six months. We've known that we were going to move almost a year and a half! We had a good routine in Colorado until the baby was born and then everything really changed, as it needed to.

All that to say we all were ready for routine and the kids were more than ready for some more structure and activities than we could give them at this point. We did our best but they definitely had too much screen time... but we gave ourselves grace.

AND NOW PRESENT DAY...

The kids started school last week. 

FOR REAL!!

A couple weeks ago we adopted the go-and-sit-in-the-office-every-day-to-ask-if-the-paperwork-is-done strategy. In this part of the world it doesn't hurt to show your face and let them know that you're anxious and waiting. Sometimes it just makes a difference. We didn't know if it would make a difference in this case but we sure thought it wouldn't hurt.

And then one day they said the papers (which was actually a security check on Mike and I) were finished. The kids could start in a couple days! Yipppeee!!!

So we gathered uniforms and supplies again and we were all more than ready the second time to send them on their second first day of school.

I don't' have pics of them returning. But they both came home with grins on their faces and lots to say. Hudson was even welcomed by some schoolmates with a bag of chips, two candy bars and a juice box! (We think it's a bit of a 'celebrity' thing... mine are the only white faces in the school. We are praying about how everyone receives the children because of this).

We are curious to see how things go for the rest of the year. But for now we are so very thankful!

Quote of the Day


Lil' A saw this photo on my dresser today. I think it was the first time she noticed it because in Colorado our dresser was tall and she wouldn't have been able to see it.

She ran to me on the other side of the house...

"Mommy! I saw the picture a-you! Daddy yook (look) at you And he hug you. He woves (loves) you Mommy!"

Oh my heart. Yes, he does!

Queen of the Mountain

I was just sorting through pictures from January. I found this gem.

Mike and I had taken the two littles with us to do some furniture shopping. We found a bunk bed for the girls and I stopped to snap a quick picture so we could show Sweet N. And just now when I was flipping through, I saw it and noticed a pair of little toddler legs. Standing on top of the bed. With arms raised. In the store. I think she thought she was playing King [Queen] of the Mountain? She clearly won while apparently neither one of her parents (nor the salesman) noticed or cared?

Frankly she's a hard one to keep up with.

For Posterity Sake

As we packed up our house, some things had to go...


Not the man, no way! The trophies. My man came home from a men's retreat a few months ago proudly toting two trophies. One was for winning the corn-hole tournament, and another for winning the Euchre tournament. I got to hear ALL about both competitions... so fun!

It was hard for him to give these up, he's so cute! So I post them here so that we and generations after us will never forget the competitive nature of this man, ha!

Awkward

The day before we flew out of Colorado to move overseas, I ran to the bank to get out a big chunk of cash to travel with. As I stood a the counter and opened my bag to get out my wallet, this is what I found in my purse.

And a lot awkward.
