This was adapted from my Wycliffe Cookbook. I started making these years ago because there is loads of fiber in there between the oats, the raisins and the coconut. It’s def a treat though!
Flapjacks
combine:
2 c oatmeal
1 c sugar (I use less)
1/2 t salt
1/3 c oil
2 eggs
2 T milk
then mix in:
1/2 c raisins
1/2 c choc chips (um... no fiber in these, but they sure are delicious!)
1 c. shredded coconut
Press into the bottom of a greased loaf pan and bake until golden brown.
